Is there a method to do the closed game thing? Like say, if me and my friend or friends wanted to play but there weren't enough of us to fill a match, can we make the rest AI's or something instead of random strangers?

Yes, you can create a private lobby and fill it with bots/friends, that's how you practice with friends and how online tournaments are set up.
